5-hour Pasta Workshop with market visit on Wednesday 5th April. We will teach you how to make the iconic tortelloni di ricotta and an additional stuffed pasta based on whatever inspires you at the market (spring has arrived which means lots of beautiful ingredients to choose from).
The Market visit starts at 8.30 am with a coffee at Caffè Zanarini in Piazza Galvani 1 after which we stroll to the historic market in the heart of Bologna. All in all this will take about an hour. Then we will meet again at 3 pm at Pasta Lab to make something beautiful with the ingredients you have chosen. You will learn how to make a perfect dough for stuffed pasta from scratch, prepare the fillings, roll out the dough in the traditional way by hand and then shape and close two different kinds of stuffed pasta. You will cook your pasta with the appropriate condiments and enjoy them with a nice glass of wine.
Duration of the class 5 hours: 1 hour market in the morning followed by a 4-hour cooking class from 3pm to 7 pm, dinner included
