5-hour Pasta Workshop with market visit on Monday May 8th. We will teach you how to make tagliatelle, tortelloni di ricotta and an additional stuffed pasta based on whatever inspires you at the market (spring has arrived which means lots of beautiful ingredients to choose from). You will also learn how to make the iconic Ragù Bolognese from scratch.
The Market visit starts at 8.30 am with a coffee at Caffè Zanarini in Piazza Galvani 1 after which we stroll to the historic market in the heart of Bologna. Back at Pasta Lab, the program is as follows:
We start making the Bolognese sauce
You make the dough and roll it into a thin sheet, completely by hand
You prepare the fillings for your two types of stuffed pasta and you shape them
After we let the ’sfoglia’ dry you cut it into tagliatelle with a knife
We move to the kitchen to cook your pasta and combine them with the sauces: tagliatelle with your Ragù Bolognese, butter and sage for the tortelloni and another sauce that we will decide on at the market
We plate and sit down to taste your pasta with a nice glass of wine
Duration of the class 5 hours: 1 hour market in the morning followed by a 4-hour cooking class until approx. 13.30, lunch included
