4 half days Pasta Workshop with one market visit Michael Preysman
Pasta Workshop in 4 half days from Tuesday October 18 to Friday October 21 with one morning market visit. The class starts at 4 pm and ends around 8 pm, dinner included. Price for 4 half days and one market visit: 580 Euro per person.
The Market visit starts at 8.30 am with a coffee at Antico Caffè Scaletto in Via Ugo Bassi after which we stroll to the historic market in the heart of Bologna. All in all this will take about an hour, hour and a half. Then we will meet again at 4 pm at Pasta Lab to make something beautiful with the ingredients you have chosen.
In your pasta class we will focus on the technical part of making the dough, rolling the dough out by hand and ultimately cutting and shaping the dough into various types of pasta. The second focus of your class will be on cooking the pasta and combining it with different sauces. In other words: cooking techniques and understanding that not all pasta goes with every kind of sauce. Possible pasta and dishes you will make are:
Tagliatelle, tortelloni, ravioli, lasagne, gnocchi, pasta al torchio (spaghetti, gramigna etc.) strozzapreti, tortellini
Ragù alla Bolognese, brodo (meat stock), tomato sauce, amatriciana, carbonara, burro e salvia, burro e limone, besciamella
